Fired broad beans (“Cravatta” broad beans)

Fired broad beans have as a peculiarity this flap of cuticle which remains in the center and makes it look like a tie (“cravatta” in Italian.) They are cut manually one by one so the broad beans remain whole and once they are fried thay take very particular fragrance and intense flavour. The perfect combination with beer!
