Generally these beans are little known and used but they are actually a type of legume that is not only delicious but also rich in properties. It is impossible to confuse them. You will easily recognize them by the small black spot, the eye they have on the side (at the point where they were joined to the pod) which makes them truly characteristic. These beans are rich in vitamins including A, C and group B but also minerals such as iron, magnesium, potassium, calcium, zinc and selenium. In terms of protein, 100 grams of cowpeas contain approximately 23 grams. They are ideal for those on a diet as they are low-calorie. These beans contain little fat but at the same time provide a lot of fiber and therefore contribute to increasing the sense of satiety as well as having positive effects on any intestinal problems. They are also a low glycemic index food, meaning they help keep blood sugar at optimal levels and, like other beans, help to keep cholesterol low. Black-eyed beans are widely used in American and African cuisine. Traditionally they are eaten on New Year’s Day a bit like we do with lentils because they are considered good luck charms.
