Description
The external part of the black bean is a very rich source of anthocyanins: these are important antioxidant substances which, in addition to giving the legume its typical dark pigmentation, act on the body’s cells, preventing aging. They also have protective action on the circulatory system, promoting the health and well-being of the heart and blood vessels. A further virtue of these wonderful flavonoids is the stimulation of the immune system: black beans are therefore also useful for counteracting inflammation and the harmful action of free radicals. Compared to other beans they are also richer in mineral salts such as phosphorus, potassium, sodium, calcium and iron. Black beans contain a good percentage of B vitamins and are an excellent source of carbohydrates. They also boast a low glycemic index and are cholesterol-free.
